Many of the models require you to clean them up for 30 minutes because you have to take out the gooey deflector plate and the greasy grates in order to scrape them off and wash them until they’re shining. So if you want more of a smoke profile, cook at longer and lower temps in your pellet pit. I have found that is the best way to get a more distinct smoke profile in your food. Cook at 180–190 for the first several hours. That probably has the biggest impact. Next, make sure you are using a good, quality hardwood pellet. Just like you need to have precise control over your unit’s temperature, you also need to make sure that your smoker can reach an adequate temperature. Most pellet smokers can reach temperatures between 180°F and 425°F, which is a decent range that can fulfill most of your smoking, baking, and grilling purposes. However, if you want to sear your meat, you will need a unit that can reach at least 500°F.
I have found that using the upper shelf gets more airflow around the meat than the lower shelf. I asked the AmazingRibs.com science advisor Prof. Greg Blonder about the problem (he has a MAK 1 Star). He explained that smoke sticks to cool surfaces and wet surfaces, and the surface of meat warms and dries out after a few hours. When he wants more smoke flavor he uses a strong smoke wood like hickory or mesquite, he starts with cold meat, and then he keeps the meat moist by painting or misting it with apple juice or a mop like Lexington Dip or East Carolina Mop or Texas Mop Sauce. I purchased a Traeger 34 inch smoker a month ago and it has never worked correctly. I called customer service several times and the bottom line is that if I want to have it serviced, I have to load it into my car and drive it to Long Beach. There isn't a service dealer in the entire City of Los Angeles! Going to return it to Home Depot. Buy any smoker other than a Traeger.
There are no food probes with this controller as there are on the MAK Pellet Boss, and the controller is mounted to the surface with two screws and no gasket so I fear rain could get into the electronics, but after more than a year of sitting out without the cover in rain and snow, the controller on the IPT I tested is still working fine. Ortech recommends covering your smoker.

The first thing you notice about yoders its the quality! They are testosterone, precision, heavy duty machines. It is indirect heat, so you can grill a ribeye without flare ups. My unit holds temps within 5+/- of the setting. Yes, you do have to clean it like a fireplace, it doesn't run on gas. The build quality is amazing, especially for a PRC manufacture. If you are interested in a pellet grill, buy a pellet cookbook. Something that gives smoke and cook times for an easier introduction into pellet cooking. The only knock against the unit is that for $800 it should have came with the "optional" folding shelf...

Food not cooking evenly or at desired times: It’s worth checking out the health of the fans in your pellet grill. Even if you see the fan working and still getting these problems, it might be that the fan is working intermittently or at slower speeds that it needs to. Dealers are happily selling these while Traeger is aware per 1-800 call that they need to replace thousands of drip pans/heat exchangers on units that have been shipped because the ones in the units shipped allow heat to fluctuate widely. Traeger recommended NOT USING THIS BRAND NEW GRILL until I receive the replacement part which they will not receive until the last part of August and they will not commit to expedited shipping when they finally ship.

***Update: 11/2014: It's been a year now and I still adore this little grill. I've got a kamado and 3 different kettles and this is by far the most convenient and easy to use. The smoke rings this guy puts on a brisket are amazing and the flavor is the perfect balance of wood flavor without overpowering the meat. I've researched about 15 different pellet grills and I still can't find a better value than what this grill offers
Despite often being called “pellet grills,” they still cook via indirect heat, as opposed to flame, and are better seen as a smoker. They’re excellent for smoking briskets, chicken and turkey, salmon and other fish, but maybe not for steaks, as you won’t be able to get the same crispy, browned sear they call for, and that you can get with an open-flame grill.

Is it customization? I called before I order my YS640 and told them I wanted my grill grates made out of expanded stainless steel, and a few other small things done to ""personalize"" my grill so it was just the way I wanted it. ""No problem. The added materials will cost extra, and shipment will a week so we can fabricate your grates."" Try getting that with a Chinese import!

Main Problem (Product): Main Barrel arrived damaged (bent inward on one end where the open area is located), and the replacement was sent a month and a half later since my purchase. Its an 80 lb. box, with little padding, and all of the components are placed loosely in the barrel. The small tack welds inside for the trip tray arrived broken. (One person struggles with this big heavy box) They would do better by placing more cushion for shipping.
I am a pellet grill newby and a recent convert from the backyard charcoal grill to the Yoder YS640. After a ton of research on pellet grills, I jumped in the deep end with this grill and have won raving Family fans after four grilling adventures. I have never cook ribs...tried three racks using a special rub and several ours on the Yoder...and my wife who isn't fond of ribs was eating the left overs the next day! This grill is easy to use and creates fantastic tasting food. My only regret is that I didn't purchase the grill a lot sooner.

Hey Eric! Man, thank you for the kind words. While I don’t post every day, I do try to make what I share with you guys as informative as possible. To that end, your words mean a lot. Now, the pellet release option is a great feature to have on any pellet smoker. In cases where you don’t have one, I suggest using a small shop vac you use just for pellet removal. Works great. But the quick release chute option saves a ton of time and effort for sure. Not what I’d call a deal breaker if a pellet smoker you like doesn’t have one. However, I’d like to see it become standard on pellet smokers for sure!
