One thing though never let the internal temperature of your bird get over 150 or you’ll have crispy skin and dry crunchy meat too. Take it off the grill and let is rest a full 30 minutes. I brought my YS640 to Mexico on a friends recommendation, he was right. I takes the complexity of smoking away but this is not the reason why I got it. We live in south of the Sonoran desert and we are over the 100F most of the year, its almost impossible to stay close to your smoker to watch the fire and temperature. Plus, wood is not as easy to get in the desert. Since I got it, I have been selling food on Sundays, I was sold out since day one. Flawless food time after time. I am planning to get the old time offset cooker to smoke in the winter just for fun. There is really no need for it.
Let's just say I really love to cook! Especially BBQ. I've had the YS640 a couple months now and can't say enough great things about it! I've grilled ,smoked and high temp roasted with excellent results! After week's of comparing and watching videos I know I made the right decision. There's just no comparison to the Chinese makes and the over priced stainless steel models. I considered the MAK smokers but at double the price couldn't justify it. For the price and USA build quality there isn't anything that can touch the Yoder!

In short, pellets compressed from sawdust and wood shavings fill a hopper and are then fed into a burn pot using an electric auger system. The auger, which is basically a long screw, delivers pellets to the burn pot based on the speed dictated by the unit’s thermostat.

I’ve had the chance to use one the the Traeger Grills Pro Series grills now for some time, and I find it to be a great pellet grill. They really beefed up the chassis of this model, with a stronger, wider-stance sawhorse base, larger wheels, a nice strong side lift bar, and an upgraded Digital Pro Controller with Advanced Grilling Logic that keeps temps steady, but allows for a temp swing of about 15 degrees. I mention the temp swing here as a positive, rather than a negative. By allowing a tiny bit of temperature fluctuation, I find the grill actually puts out a bit more smoke throughout the cook as pellets are fed in to regulate temps.
If you don't buy this cooker and spend more than $600 on any cheap thin steeled cooker. By year 2 you will realize you paid for quality that lasts. I joke that no one would steal it because it weighs so much. But it's my baby and it's double locked. I promise you in a year you will look at your wife or family and say "That's the best purchase I ever made!" It's impressive, no one makes a better product. If u buy Traeger or any other cooker. In 3 years you will regret not spending the money on a luxury machine. Yoder is the best of the best. Yoder is who the other guys want to be. I would buy it again tomorrow! Don't have regrets. I have used mine Traeger 15 times and it hasn't worked once. I will not hold the temp within 15 degrees as they state. I can set mine to 225 and will go between 180-370. It also consistently shutting itself off with the same error. I have spoken to cust service 12 times and they are worthless. I have had new controller sent and other various parts. I have been on the phone with them for hours. I always have to take my meat off and finish it on my Weber. They refuse to send me a new one. They still demand to go back through the same damn steps as the last 12 times to debug it. Never again. If you see my post on Craigslist, don't buy it, it's a lemon that Traeger will not support.
