This is a nice article for people new to pellet grill/smokers. Like jennifer, we have a vermont cast ing cast iron gas grill that has ‘rotted out’ internally. Calls to vermont cast ings has resulted in ‘we no longer support, make or sell parts for grills made before 2008’ and other run arounds. As a result we are looking for other options. We like the cast iron grills and grill heat but are considering other options, (Webber, Pellet, gas).


The fight for building the cheapest pellet smoker with decent quality is pretty intense. Unfortunately, a cheaper pellet grill often leads to lower quality construction. The Camp Chef SmokePro DLX is more expensive then the Pitboss 71700fb, and in our opinion the Pitboss is the better pellet smoker. It isn’t a bad unit; the controller of this smoker even includes a meat probe which typically comes only with the more expensive units. However, it does have one flaw – the lid.
You prefer a direct heat method of grilling: The Traeger grill uses an indirect heating source, much like an oven, so you won’t be able to sear meat, as many people like to do when grilling a steak. The Traeger system is better for those people seeking more of a smoker type of cooking system, although you can sear your meat by using a frying pan with a little oil initially before you finish cooking it with the Traeger grill. You can use the frying pan on a stove top burner or on the surface of the Traeger grill.

One thing you could do for steaks is cook them at the higher range thus being able to get a sear much like you would on a direct heated Grill service, for instance on your Weber. Another option would be to cook the steak in the reverse see your method, by bringing it up to temperature at a lower smoker setting and adding some smoke flavoring that way, then removing it and bringing the smoker up to its higher settings so you can finish off the steak with some of the effect you would achieve on direct flame. I normally do this by bringing the steaks up to about 15 degrees below where I want them to finish. Then, I finish them off at the higher temperature to where they are about 5 degrees below my target. This usually means a few minutes on each side but I use a Thermapen to be sure.
A pellet hopper is what you put your pellets in. The grill will automatically help itself from the hopper and use it to maintain the temperature you want it to. More heat requirement will use more pellet, and less heat will use less. What you need to make sure is that you have a good sized pellet hopper so that your grill can keep using from it and you do not have to keep refilling the hopper too often. There are pellet grills out there that are powerful and gentle enough to be cooking for hours, and sometimes overnight, all thanks to its large pellet hoppers that keep replenishing and refueling the fire all throughout.

In 2008 there were only two consumer pellet grill manufacturers. Today there are dozens. The market for these relatively expensive devices is small but growing fast. Not all of these small manufacturers will survive. Forget the warranty and ask "When it breaks will the manufacturer still be in business?" They do not have repair shops near you. When it breaks will they be able to diagnose the problem over the phone? They may be able to figure it out, but then you have to buy the replacement parts and do the repair work yourself. It allows meat to be smoked for hours at a temperature of 150 degrees F. You could increase temperature to 500 degrees F for searing and grilling. With convection, the cold and hot areas of the grill can be replaced with even heat.
Hey Tom! First, thank you so much for commenting on this article. I hope it’s proved useful to you and helping you make your pellet smoker buying decision. I took a look at the smokers you mentioned in your comment, and they appear to be similar in build to those made by Yoder. I can verify that Yoder does exceptionally good work with both the build quality and the heavy gauge steel Construction of their smokers. I don’t know much about the manufacturing practices of the smokers you mentioned. I do like the fact that their controller automatically dropped down to a warming temperature after your food reaches the programmed temperature setting. That’s a feature that I’ve only seen in higher-priced pellet grills like the Memphis Pro Series that I talk about in this article. However, more grills are starting to utilize this in the programming aspect of their controllers. In any case it’s a great feature. To be honest with you I’m not sure that the auger mechanics are going to be all that different between smokers. I’m sure there are differences, but I don’t feel that they are dramatic enough to offer a distinct selling Advantage for the manufacturer. If you haven’t looked at them yet, you might consider taking a look at the Traeger Pro Series pellet grills. You can’t find it on Amazon, but you can find them at different retailers listed on the main Traeger site. A friend of mine has one major competitions using the pro series models.

The control panel is simple, uncomplicated and easy to use, no codes of crazy steps to remember. Turn the switch on, set the temp once it lights and you are ready to go. I have owned my YS640 for about 9 months now. Before I bought this I researched smokers/grills for about 2 years because I had very little experience with them & cooking in general. With the help of a few good websites I have produced some great food. There is a ton of room to cook on & the heat stays pretty much where you want it. Only a few issues I have had is that where the stack mounts to the side of the grill it drips. I did have a scratch on mine from the shipper & when I called about it I was sent a can of matching high temp paint very quickly. One thing that I like the most about this smoker is it is heavy. You can tell that this thing was built to last.
I use to have a charcoal/wood fired smoker and it was a nightmare maintaining temperature especially on a long brisket cook. Instantly I've fallen in love my YS640 coupled with a fireboard. You literally set the temp load it up and walk away with no stress or worries about maintain temperature. It provides great smoke flavor too. Yes it is an expensive purchase but that is because this thing is built like a tank and will last for decades.
Though it is technically a grill, you can carry out so much cooking styles in it. It can be used to sear meats and other food to a perfect golden crusty perfection; it can be used to bake quiches just like you would in a normal indoor oven. This is absolutely a trademark appliance that can also be used to smoke food, it can also be used to slow braise food, making it ideal for cooking up winter stews and casseroles. And very obviously you can grill in this thing. The lid on the pellet grills also aid in fast cooking by trapping smoke and heat and allowing the food to cook and flavor through quickly and more evenly.
I cannot comment on the quality or Function of the Grills as I never received mine. I order a Texas Elite 34 at the Minnesota State Fair on Aug. 23rd for $899 with a few extras and was told this was the lowest price ever (Not True). They did not tell me about the pro series which I found later. They said it would be delivered within 7 days. 2 weeks later no grill so I called customer service just asking on when I would get the grill. They could not find my order and did not believe I ordered one... They said I had to email them my receipt as they could do nothing on the phone.
Some cheaper models, such as the Brinkmann, have a controller with only three settings, Low, Medium, High (LMH), and there is no temperature probe in the oven to create a feedback loop. We do not recommend these units. You actually have less control over temp than you do on a gas or charcoal smoker. The whole reason to buy a pellet grill is because it is set-it-forget-it and it hits a temp and holds it regardless of the ambient air temp outside, winter or summer. On these LMH controllers, the temp fluctuates widely and it cannot correct itself for the weather. They just aren't as smart as a digital device. Whether you're smoking a few slabs of ribs on a scorching summer day, or six pork butts during a blizzard, the three position controller only knows auger on and off times for Low, Medium, and High. It has no information on the temperature inside the cook chamber.

Bought my Texas Elite 34 Traeger pellet grill last summer at Oshkosh Fly-in. Received it and assembled it with no issues. Began using it and discovered it will not make temperatures above 375 deg F. Most of the Traeger recipes need 400+ deg, so this wouldn't work. Called Traeger. They started sending me replacement parts, first the combustion air fan, then the auger motor, then a digital temp controller. None of these new parts had any effect on the problem. I have probably called Traeger 10 times, finally getting a hold of a second level supervisor named Jessie. He decided to send me a whole burner module; pellet hopper, auger tube, burner bowl, fan, controller... everything in one assembly. I installed it and no improvement. I did a time vs temp test for them at their request. They finally agreed it wasn't working properly.

In 2010, I sprung for a discounted Rainer with $80 in tip money and a pro deal through the whitewater rafting company I worked for. It was an expensive purchase for me at a time when my monthly food budget was around $60. But hey, along with a Roll-a-Table, two chairs I “borrowed” from the rafting company, and my cooler, I had almost a full kitchen that I could deploy from the back of my truck. And the Rainier quickly proved a wise investment.
If you live in an area where wood furnaces are used (not like down here in FL where a few heat strips will do the trick), you may also be familiar with pellet furnaces. In short, pellets compressed from sawdust and wood shavings fill a hopper and are then fed into a burn pot using an electric auger system. The auger, which is basically a long screw, delivers pellets to the burn pot based on the speed dictated by the unit’s thermostat. As the burn pot ignites, the pellets burn. Heat then carries through the home via convection (air driven) means, thus allowing air flow and a blend of warm and cool air to maintain steady, even burn temperatures. A heat exchanger separates the smoke fumes from the warm air, thereby warming the room without smoking everyone out.

The biggest cleanup issue is the buildup on the heat deflector under the cooking grates. You'll need good gloves and an apron. On most models, a thorough cleanup means a 30 minute process of taking out the greasy grates and the gooey deflector plate, scraping them and washing them. You should do this when the carbon and grease cover the deflector plate. Stainless parts can go in the diswasher, but I wouldn't do it. That grease is like tar and it could get all over the insides of the dishwasher and hang on for dear life. I use a handheld steamer like the Steamfast SF-320 Portable Steam Cleaner shown here.

It has a cooking area of 800 sq. inches and a hopper capacity of 20lbs. While that just would be fine for regular smoking, this product needs some supervision and pellet refilling for longer smoking sessions. It does not have a Wi-Fi enabled control system, though it does come with a digital control system to provide you some ease of control while cooking with this product.
I bought a Yoder YS480 three years ago. I still use my cheaper pellet grill for everyday smokes, but I use the Yoder when I want to get serious. It does a beautiful job on baby back ribs (can do up to 8 racks laying flat on the grate) and I have smoked two complete turkeys at a time. The only time I have had a problem after 2 1/2 years of smoking was caused by a failed temperature probe. I got a new probe, installed it in a few minutes, and was back up and smoking again.

But, along with some shelves we don’t need, a headboard that won’t fit our new bed, and a gigantic chest freezer I haven’t yet filled, the Egg has languished in the back corner of the garage since then. That’s because a brand new Traeger Timberline 850 was sitting here waiting for us when we arrived and it’s performed so well and become such an essential part of my cooking that now I can’t imagine using anything else.
