My cousins have Traegers.. and they smeared by them. One weekend at my cabin one has ordered his the other don't have the money yet. I have used it a minimum of 2 days a week and have already got my money out of it by not ruining meat. The guys at Yoder have a monopoly. No one makes a cooker that could stand up to it. I bought the Pit Boss 440 Deluxe & cooked a pork butt. Set it on Smoke (P4) all was well for 2 hours then temperature ran away to over 615 degrees. Ruined that piece of meat. Called customer service & they talked at me instead of listening to me. Tried another pork butt set on 225 degrees temp once again ran away after an hour. Wrote an email to customer service with a response that they were sorry I was having trouble. Tried again today with the same result so sent another email with pictures of settings & indicated temperatures. Guess I'll have to finish this pork butt in the oven & go buy a Treagar Pellet Grill. If Pit Boss corrects this I'll update this review!

This is a great smoker for beginners who are willing to take the time to understand how pellet smokers work. I did a lot looking around at pellet smokers before buying the ys 640. This thing is amazing! I have been cooking BBQ for about 15 years. I owned a Gator pit entertainer which is made in Houston Texas (stick burning pit) and I currently own a $25,000 Ole Hickory Pit EL-EDX which can cook 700 lbs of BBQ at once. I wanted something smaller to cook for family. The ys 640 turns out PERFECT Q every time! The amount of smoke is just right. Plenty of smoke flavor without over smoking which is very easy to do in my other pit. This is an EXCELLENT product which I strongly recommend.
****Update 12/2014: So I finally found something negative to report. Today I was cooking 2 pork butts and a brisket and discovered that this grill does not do well with wind on a brisk day (It was 45 degrees here today). When set at 250 degree, the smoker could barely make it up to 190 degrees. I was able to bypass the problem by throwing a cheap moving blanket over the grill (an $8 fix) but I think it's worth noting.
Hey Jeff – I think that due to pellet smokers requiring much of the wood pellet for “fuel” leaving a smaller part for the “smoke” means that you want as much of the smoke to stay in the chamber for as long as possible. Just my opinion. I’ve not used charcoal pellets. Those I’ve spoken with who have used them weren’t extremely happy with the results. Regarding the water pan, I feel that pellet smokers don’t typically require water pans. However, you can surely use one and see how your results go.

This review is just a repeat of many already submitted.  Got my Traeger Elite 34 this summer at a trade show.  It would not get up to temperature, wouldn't go about 360deg with food inside.  Empty it would hit 390 max.  Most of the 'infamous' Traeger recipes call for 400+.  If you raise the lid, the temp falls to the low 300's and takes 15 minutes to recover.  I called Traeger and they claimed their grills 'never do this'.  After reading dozens of reviews since, the truth is that they seem to 'usually do this'.  The big grilles just do not have enough BTUs to heat up properly.

Using accurate digital thermometers to monitor cooking and internal meat temperatures is essential to being all that you can be in the backyard. This is a nice article for people new to pellet grill/smokers. Like jennifer, we have a vermont cast ing cast iron gas grill that has ‘rotted out’ internally. Calls to vermont cast ings has resulted in ‘we no longer support, make or sell parts for grills made before 2008’ and other run arounds. As a result we are looking for other options. We like the cast iron grills and grill heat but are considering other options, (Webber, Pellet, gas).
With the traeger, rec-tec or cam chef smokers all seem to burn 1-2lbs per hour. But for a long 18hr brisket it seems like I will have to continue to use pellets the whole time to keep the heat in range over over 200 which will mean I am using almost a 20-40lb bag depending on the time year per smoke. This is even more expensive than the bradley seems even with the wasted briquette. IS this correct or is there something I am missing?

Bought the Costco trade show model after about 4 years of debating the purchase... OK, first one broke on day one as "auger" stopped spinning. Returned and received a new unit. 2nd one smoked a turkey for 4.5 hours. After 4 hours temp. dropped to 100 degrees and it was set to 350. When I opened the smoker to check on why this happened, it exploded into a ball of flames! There was fire shooting out from all sides of the grill and smoke and heat coming from the feeder side of the grill... This was SCARY and could have absolutely caused a major fire, and/or injury!!!
Overall, I think you would be happy with the smaller smoker / grill. I really like what Green Mountain grills has done with the Davy Crockett model, and that is the unit I have personally. That said,Rec-Tec makes a great product, and some people prefer the cart stand it comes with rather than the fold up legs that Green Mountain grills uses on the Davy Crockett modeling. Either choice would be good for you if you are looking for a smaller unit. I am of course speaking about the mini version of the Rec-Tec. The larger version is excellent as well.

This grill produces fall off the bone ribs. I've also cooked a brisket to perfection. My only issue is that I have to clean it after every use. If it isn't cleaned properly (I remove all of the grates and use a shop vac to suction all ashes and unburned pellets) the pellets will back up and when they finally push through, you will have a huge flare up that will potentially burn whatever you are cooking as well as take the paint off the grill itself. Also, I find it works better if you set the dial to OFF and then back to whatever temperature you want. Other than those few quirks, I love this grill. I did find a larger Pit Boss after I bought this one, but it was about $150 more.

PID Controller–PID Controllers (Proportional Integral Derivative) are devices that most of the grill manufactures don’t fully utilize yet. They can be found as a separate device attached to the grills if you’re handy enough, but all the manufacturers aren’t fully considering them yet. Using a PID controller, you can accurately maintain the temperature while cooking and ensure that the food is cooked automatically to perfection without much supervision.
Another option is to put a griddle (or GrillGrates) on the pellet smoker when it's cranked to high heat, get it blistering-hot, add just a little oil to prevent sticking, and sear by conduction on the metal. It should take only two to three minutes per side. This is a good technique for reverse-seared meats: You start them indirect, low and slow on the cooking grate, with a little smoke, and then sear the surface with direct contact to the hot metal griddle to create a delicious brown crust. It's not as good as searing directly over hot coals or gas, but it's a good compromise.
I have several smokers I have used over the years. I have dialed in everyone I own over a course of trial and error. They all get great results, but require me to tend them all throughout the cook. I wanted a smoker that I could easily get to the desired temp, maintain the temp, provide good smoke flavor, and have the size to do a small or large cook, and not need me to be tending it throughout the cook. The learning curve on this smoker is super easy if you know all your temps, your first cook will give you the results your looking for. I was a little worried that I was not going to get the smoke flavor with a pellet smoker, but my brisket turned out amazing, very tender, the smoke ring was perfect. When I was searching for a new smoker I was a little shy of the Yoder based on the price, but when you figure in the ability to grill as well this became a better alternative. The quality is top tier, this is built to last a long time. I'm so glad I went with the Yoder YS640 no regrets.
The biggest cleanup issue is the buildup on the heat deflector under the cooking grates. You'll need good gloves and an apron. On most models, a thorough cleanup means a 30 minute process of taking out the greasy grates and the gooey deflector plate, scraping them and washing them. You should do this when the carbon and grease cover the deflector plate. Stainless parts can go in the diswasher, but I wouldn't do it. That grease is like tar and it could get all over the insides of the dishwasher and hang on for dear life. I use a handheld steamer like the Steamfast SF-320 Portable Steam Cleaner shown here.
